This vibrant and flavorful ceviche features fresh shrimp marinated in a tangy lime and jalapeno sauce, perfect for a light and refreshing Mexican dinner.
Ingredients:
• 1 pound large raw shrimp, peeled and deveined
• 1/2 cup fresh lime juice
• 1/4 cup chopped red onion
• 1/4 cup chopped cilantro
• 2 serrano peppers, seeded and finely chopped
• 1 jalapeño pepper, seeded and finely chopped
• 1 clove garlic, minced
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1/4 cup chopped cucumber
• 1/4 cup chopped tomato
• Avocado slices, for garnish
• Tostadas, for serving
Instructions:
1. In a large non-reactive bowl, combine the lime juice, red onion, cilantro, serrano peppers, jalapeño pepper, garlic, salt, and black pepper. Whisk until well combined.
2. Add the shrimp to the marinade and toss to coat evenly. Cover and refrigerate for at least 2 hours, or until the shrimp is opaque and cooked through.
3. Drain the ceviche, reserving the marinade.
4. Divide the ceviche among tostadas and top with cucumber, tomato, and avocado slices. Drizzle with the reserved marinade and serve immediately.
Tips:
• For a spicier ceviche, leave the seeds in one of the serrano peppers.
• If you don’t have serrano peppers, you can substitute with poblano peppers.
• You can also add other vegetables to the ceviche, such as bell peppers, carrots, or zucchini.
• Serve the ceviche with a side of chips and salsa for a complete meal.
