Ingredients:
- 3 roma tomatoes
- 2 guajillo chiles, dried
- 2 ancho chiles, dried
- 1 arbol chiles, dried
- 1⁄2 white onion, sliced
- 4 garlic cloves
- 1⁄4 cup apple cider vinegar
- 1⁄4 cup olive oil
- 1 tsp Mexican oregano
- 1 tsp cumin
- 1 tsp salt
- 1 tbsp brown sugar
- 2 cups water
Optional Ingredients:
- Lime juice
- Cilantro
- Crumbled queso fresco
Instructions:
- Remove stems and seeds from the dried chiles. Place in a small pot with the water and bring to a boil. Turn off heat and allow to rehydrate for 15 minutes.
- Place tomatoes and onion slices on a baking sheet. Broil for 10-15 minutes, flipping halfway through, until charred and softened.
- Place rehydrated chiles, charred vegetables, garlic, Mexican oregano, cumin, salt and brown sugar in a blender. Puree until smooth, adding water if necessary.
- Heat olive oil in small saucepan over medium heat. Pour in chile mixture and simmer for 5-10 minutes to meld flavors.
- Remove from heat and stir in apple cider vinegar. Add salt/sugar to taste if desired.
- Allow to cool and then serve over your favorite Mexican dishes! Garnish with lime juice, cilantro or queso fresco if desired. Enjoy!
