Ingredients:
- 2 cups of cooked pinto beans
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons of vegetable oil
- 1 teaspoon of ground cumin
- Salt and pepper to taste
Optional Ingredients:
- Chopped fresh cilantro for garnish
- Shredded cheese for topping
- Diced jalapeno for extra heat
Instructions:
- Heat the oil in a large skillet over medium heat. Add the onion and garlic, and sauté until they are softened and fragrant.
- Add the cooked pinto beans to the skillet, along with the cumin, salt, and pepper. Stir well to combine.
- Use a potato masher or the back of a spoon to mash the beans until they reach your desired consistency. You can leave some beans whole for texture if you like.
- Continue to cook the beans, stirring frequently, for about 10 minutes, or until they are heated through and creamy.
- If using, top the beans with the optional ingredients and serve warm.
